Queso Dip (Chile con Queso)

Queso dip, also known as chile con queso, originated in the northern Mexican state of Chihuahua. Today the creamy dipping sauce is an integral component of Tex-Mex and Southwestern cuisine. Though first introduced to US palates in Texas, it has since become a party staple throughout America. The main ingredients are Velveeta or a similar processed cheese product, diced tomatoes, and chilies. Served warm, queso may is typically eaten with tortilla or pita chips as an appetizer or snack. It also lends itself to use as a condiment on tacos, enchiladas, and fajitas, as well as other Tex-Mex dishes.

Ingredients

  • 1 lb Velveeta or other pasteurized prepared cheese product, cut into ½-inch cubes
  • 1 can (10 oz) diced tomatoes and green chilies

Directions

  1. Combine both ingredients in a 2-quart microwaveable bowl.
  2. Microwave on high for 5 minutes or until cheese product is completely melted, stirring after 3 minutes.
  3. Serve with tortilla chips, pita chips, or cut-up fresh vegetables.
