Grilled Shrimp

First used for food by Native Americans, shrimp remain one of the most popular shellfish in the US today. The word “shrimp” comes from the Middle English word shrimpe, which means “pygmy” and refers to the crustacean’s small size. An excellent source of protein with almost no saturated fat, shrimp are considered a health food. They are also high in calcium, iodine, and omega-3 fatty acids. Other common methods of preparation include breading and deep-frying, sautéeing, roasting, and boiling for dishes like shrimp cocktail.

Ingredients

  • 1 large garlic clove
  • 1 Tbsp kosher salt
  • ½ tsp cayenne pepper
  • 1 tsp paprika
  • 2 Tbsp olive oil
  • 2 tsp lemon juice
  • Nonstick cooking spray, as needed to grease grill
  • 2 lbs large shrimp, peeled and deveined
  • 3 lemons, quartered

Directions

  1. Preheat the grill to medium heat.
  2. Crush the garlic with the salt in a large bowl.
  3. Stir in the cayenne pepper, paprika, olive oil, and lemon juice to form a paste-like sauce.
  4. Add the shrimp and toss to coat them in the sauce.
  5. Skewer the shrimp, using five shrimp per skewer.
  6. Grease the grill using nonstick cooking spray.
  7. Place the skewered shrimp on the grill and cook them for 2–3 minutes per side or until opaque.
  8. Remove the shrimp from the grill and serve immediately with lemon wedges on the side.
