Grilled Halloumi

Halloumi cheese is from Cyprus and made from a blend of sheep and goat milk. When the cheese is made its curds are cooked on high heat, giving it a rubbery and semi-firm texture. It also has a higher than normal melting point. It maintains its shape when heated and is good grilled or pan fried. Heat enhances both texture and flavor, with a squirt of lemon often the only garnish. Try grilled halloumi in a sandwich with grilled onions and tomato as enjoyed in Cyprus.

Ingredients

  • Halloumi cheese
  • Lemon wedges, for garnish
  • Chopped parsley, mint, basil or oregano, for garnish

Directions

  1. Heat grill to medium high.
  2. Slice halloumi into ¼- to ½-inch slabs.
  3. Grill cheese about 3 minutes per side, until lightly browned on outside.
  4. Plate and serve immediately.
